When I had children I knew that I always wanted to make their birthday cakes by my hands only and by scratch. My Mam always made mine and my brothers cakes and it was something of a tradition that I wanted to carry on with my children.
When it came to making my daughter first ever birthday cake I was a little nervous as I always have been able to make the most beautiful cakes, but when it came to decorating them…..well the most I’d done is write very scruffily “Happy Birthday Babe” on a plain sponge cake with a crappy edible gel pen.
Anyway I decided this first cake would be something that was a challenge but not too difficult. (The chocolate fingered icing one) I did a chocolate sponge with choc butter cream running through and buttercream on the top For decor and used as a glue for the fingers. Got some shimmer and stars from asda. I thought I did pretty well considering.
My next cake was the 2nd birthday Minnie mouse one. This took me most of the afternoon to decorate and I made lots of mistakes but again, it came out ok. The cake was a Victoria sponge type with jam and buttercream. I made all the decor out of fondant with my bare hands. I was chuffed to bit because when my daughter caught a glimpse of it she shouted “Minnie mouse!!!” She was so so excited ❤️
Next was the 3rd birthday and I was very tied up with my 2nd child who was 2 months old and very needy. I didn’t want to let Esme down or the new tradition down but I really had no energy at all. I decided to make a beautiful cake with a simple white sponge and buttercream and cover it in pink icing which seemed easy enough to do. I then improvised and use Esme’s favourite dress up tiara. Washed, sanitised it and popped it on top of the cake. She was chuffed so I was happy.
Next my friend decided she was going to have a cake made for her step daughter. The cake makers wanted to charge her £80 for a simple cake so I offered to do it for her at cost price of the ingredients as I knew she was struggling a bit financially and she wanted to see the little one smile.
Again it was just a simple Victoria sponge type cake made with jam in the middle and butter icing inside and on the crust layer. I then added the fondant and covered it in the toys of my friends choice using them as toppers. I then made some little flowers ect to stick around the cake to fit with the theme. Everyone was very happy and we had a wonderful party for them.
Adem was born woohoooo!! He had the fastest first year I’ve ever experienced in my life. Honestly I don’t know where that year went but suddenly he turned one and he absolutely adored paw patrol!!
I went a little more adventurous with this cake and again used a easy sponge recipe for the actual cake with a thick buttercream inside and on the crust layer, covered in red fondant icing and made little decors and a topper from different coloured fondant making it fit with the paw patrol theme and logo.
He loved it, it was more for me really as he didn’t really understand too much, he did get excited when he caught a glimpse on the cake so I was happy.
Adem’s 2nd birthday approaches and he asked for a Madowgar cake (minions) he would call them the closest thing he could pronounce ❤️ I decided to keep this quite simple and put a lot of the detail in the decor. I did a simple sponge with jam with a butter cream crust, blue fondant on and I stuck amazing little minion faces around the sides and again using his toys on top as the main topper. It worked amazingly and his face lite up when he saw his cake.
Esmes 4th birthday cake was bought from a cake makers from my brother as we threw her s huge garden party and he really wanted to buy at least one cake for her. I agreed.
The big finally (for now)
Last but not least esmes 5th birthday cake. She was a shimmer & shine fanatic.
This was a tv show and she absolutely loves it. She begged me all year to make her a shimmer cake. I went all out on this one as she finally understood what she wanted and actually asked for it. I planned well in advance and bought all the supplies and tools early on so I was ready for the challenge.
I mixed this one up,
The large bottom tier, was a chocolate cake with a beautiful rich, thick, chocolate butter cream running through it and in the crust layer, covered in bright pink fondant icing and decorated beautifully with props I bought and letter I made and sprayed out our fondant.
The upper tier was the most moist and tasty salted caramel sponge with an added salted caramel butter cream running through it and on the crumb coat. (This really was beautiful and tasty) .
Again I decorated it by using a teal coloured fondant, using edible diamonds and a gorgeous cut of ribbon I found online. I used plastic topper for this as when you pressed the top of it, it would sing the shimmer and shine theme tune and it would light us making it an amazing feature of the cake. I bought the 2 figures and added these and some beautiful feathers added just to make the cake pop! I used all edible glues and sprays.
This was by far my most biggest challenge and it really paid off! It was so tasty and moist and really beautiful for something that was made by me (a novice)
