Love these, so quick and easy using leftovers!
Yesterday I cooked a chicken dinner for tea but we still had had the chicken left and needed to strip the bones.
This is a fantastic tea to use up all that leftover chicken!
- Left over chicken or chopped rotisserie chicken, sometime I even fry up some diced chicken breast.
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/8 tsp cayenne pepper
- 1/2 tsp garlic salt or 2 cloves crushed.
- Mayonnaise to mix or mix dry
- Tortilla flat breads
- Grated cheese of your choice
- Sour cream to dip in.
Take your leftover chicken either picked off the bone or fried up, chuck it in a bowl and mix in the paprika, cumin, garlic, cayenne, (if you’re using cold leftover meat then I give it a quick blast in the micro to heat it through, We all know reheated chicken that’s not heated thoroughly can be a bit risky!
If you’re worried about the meat drying out, you can always add a tsp of mayo to the mix before heating up. (Mayo is very oily though so don’t use too much or you’ll have a mega soggy quesadilla.
Now take one tortilla I use large ones, sprinkle a little cheese on one half and on top add a little of the chicken mixture. (don’t overfill) sprinkle a LITTLE more cheese on top of the mixture and fold the tortilla in half and press lightly.
Now put a large drying pan or skillet onto the heat (dry). let it warm up and then place your filled tortilla into the hot pan and cook on a medium heat until the cheese starts to melt and the case becomes golden and slightly crispy.
Don’t forget to turn it before it burns as the pan can get really hot and really fast as it’s dry. (If your pan does become over heated, just pull it off the heat for a few mins.
I like to serve mine with a decent sized pot of sour cream sprinkled with a little paprika for that extra kick and taste.
Also salad on the side is lovely.
Sometimes I add cooked rice into my chicken and spice mixture and add this to the tortilla before chucking it in the pan. I always always make sure if it’s not fresh and I’m using leftovers, I wiz this in the micro for at least 5 mins, stirring often.
Rice is a the devil of food and can store a higher number of bacteria so you must must must make sure it’s piping hot, all the way through before eating!
