Spanish seafood paella

Ingredients

  • 1 tsp Garlic powder
  • 1tsp Paprika
  • 1tsp Salt
  • 1/2 Chilli powder or cayenne pepper
  • 1/2 tsp Cumin
  • 1/2 tsp Oregano
  • Parsley and lemons to garnish
  • 1/2 tsp Black pepper
  • 1/2 tsp Turmeric
(Up or lower the spices quantity to your taste! )
  • Seafood mix – mussels, prawns, squid, ect
  • 400g can of chopped tomatoes
  • 300g risotto rice
  • 900ml chicken stock
  • One large white or red onions
  • Oil
  • Method

  • fry the diced onions in a frying large pan or wok and soften for 5 mins. Stir in the spices and the paella rice for 1 min and mix well. Next stir in the tomatoes and stock. Season with salt and pepper if wanted and cook, uncovered, for about 15 mins, stirring now and again until rice is almost tender and still surrounded with some liquid.
    Stir the seafood into the pan and cover with a lid. Simmer for 5 mins, or until the prawns are cooked through and the rice is tender. Squeeze over the lemon juice, scatter with parsley and serve with extra lemon wedges.
