Quick, tasty, tomato chicken pasta


  • Diced chicken breast /leftover chicken
  • 1 tbsp Tomato paste or 3/4 tube purée
  • Butter a large knob of butter
  • 1-2 white onions chopped
  • Dried parsley
  • Salt & pepper
  • 1 squeeze of garlic Purée (half tsp)
  • 1tsp paprika
  • Half bag pasta
  • 1-2 kettles of boiling water
  • method
  • First off, put your pasta on to cook, drop half a bag of dried pasta and cover in boiling water, cook through until nice and soft but not soggy.
  • While the pasta is boiling, Dice and brown-cook up your chick breast, place your chipped onions into a microwaveable bowl, mix in the large knob of butter, cover and pop In the micro for around 6 mins stirring half way through (cook until soft)
  • you can also cook the onions by adding to the pan with the chicken and cooking until soft but I prefer to cook them in the melted butter to grab all the flavour. Also it’s a time saver.
  • When your pasta is cooked through, drain off and pour over a kettle of boiling water to wash away all the starch (leave a little of preferred) then add to a bowl, chuck in your chopped chicken, cooked onions & melted butter and mix.
  • Now add in the tomato purée, paprika, garlic purée, parsley, salt & pepper and give it a good mix until all ingredients are complete combined. Give it a little taste and Make sure it tastes to your perfection. If it needs a little more of something then whack it in!
  • I found mine needed a tag more garlic.
  • If you prefer you can use chopped garlic if you find the purée too tangy.
  • I also found that this dish doesn’t actually need the chicken either, it’s just as filling and tasty without 🙂
  • Pour yourself a glass of vino and enjoy!!!
  • Below is another version cutting out the chicken but adding sweet corn
