Fab easy dish when you fancy some real turkish food.
- Lamb mince
- 2 tsp cumin
- 1 tsp salt
- Freshly ground pepper
- 1 tsp paprika
- 1tsp garlic salt
- 1 tortilla small wrap
- 1 egg
- 1 large white onion
- Spray oil for baking
- 3tsp dried parsley
Firstly whizz up and blend your wrap into crumps and add this to a mixing bowl, not chop your onions up into chunks and chuck this in the blender and give that a whizz until your onions are finely chopped to near purified and also add to the mixing bowl.
Now add the lamb mince to the bowl and crack an egg in with all the spices listed in the ingredients above.
Pre-heat over to 200/gm6
(You’ve already washed your hand at the beginning but wash again with soap and hot water and make sure your hands are clean from bacterial and clear dirt under finger nails, I’d also suggest you take off and rings or bands)
Now your ready, get your hands in and squash the mixture up, all between your fingers, mixing and squashing. Keep doing this until everything has all combined well with the meat and it’s all the same colour and becoming a paste like consistency.
Now you’re ready to form the mixture into kofte, burgers, kebabs ect.
***(Remember the will shrink to half the original size when cooking so keep them big unless you was meat balls the do then mould them the size of a small burger)***
Spray a deep baking tray with a little oil or lined with foil in and lay on Your kebabs.
Now pop in the oven for around 26-40 mins (depending on shape and size the could be fully cooked in just 10 mins, so keep an eye on them!!
If you’ve moulded small burger type köfte then you can also shallow fry these if prefer.
Serve up with anything that tickles your fancy…….. turkish rice, chips, jackets, salt & bread/wraps.
Also yogurt/garlic yogurt and a few slices of raw onion compliment this meal marvellously.
