Turkish chicken, potato & aubergine stew

One of the quickest, easiest and cheapest meals to make!

It’s also a fab meal to make if your in a rush or if you have a company coming for a meal at short notice.

(This can happen a lot with the turks, they people just drop by unannounced or they decide to stay for tea at the drop of a hat, most turkish families are huge too.

Ingredients

  • 500g Diced chicken
  • 1 aubergine (small cubes)
  • 2 small potatoes or 1 large (cubed)
  • 2 large white onions (chopped)
  • 2 tins of chopped tomatoes
  • 1 garlic clove diced
  • 1 tsp dried parsley
  • 1tsp paprika
  • 1.5 tsp red pepper spice
  • 2tsp of red pepper paste
  • 1/4 tube of tomato purée
  • 1 mug of chicken stock
  • 1tsp cumin
  • Salt & pepper to garnish.

Method

First I peeled and chopped the potatoes and cubed, add to a pan of boiling water and salt and par boil or to soft (depending on how you like them) then cube the aubergine with the skin on, into small cubes, and slice the onions, add the aubergine and onions to a separate pan with veg oil and fry slowly until soft (add a little salt to help bring out the excess liquid in the aubergines)

When the potatoes are boiled, drain and leave aside, in the potato pan you can fry your cubed chicken in a little oil until cooked through, once the chicken is cooked, add this to the pan with the aubergine and onion and also throw in the potatoes.

Add 2 tint of tomato’s, tom purée, diced garlic, paprika, parsley, stock, cumin, red pepper paste and spice, basically chuck in what’s left on your list of ingredients.

Stir all together, bring to the boil and then let it simmer for 15-20 mins on a very low heat just so you can bring all the flavours together.

Once it’s boiled through, it’s ready to serve. I like to serve with traditional turkish rice (see blog for recipe) or its nice in a bowl with fresh crusty bread.
