Using leftovers in the fridge I make this fry up and it’s beaut.
- Half a tin of sweetcorn
- Half a carton of double cream
- 400g diced chicken
- 2-3 large leeks slices thinly
- 1 tsp salt
- 1tsp pepper
- 1tsp paprika
- 1-2 chopped garlic cloves
- 1 tsp garlic salt
- 1/2 tsp meatball spice.
- Hand full of cheese to garnish
- 4-5 large mushroom sliced
- Small bag of tiny new potatoes boiled and chopped.
- Olive oil
First pop your potatoes in a pan of boiling water (or you can add to cold and wait for the boil) and a add a pinch of salt to the water, leave to boil until soft.
No I’m a deep pan fry off your diced chicken in a hot pan with olive oil for around 4 mins, add the chopped leaks and fry on low until soft, then add in the sweetcorn, mushrooms, salt & pepper, meatball spice, chopped garlic cloves, garlic salt, paprika and leave to fly on low for a few minutes, just to soften the ingredients and cook them through while letting all them flavours marry together!
Once everything Is cooked through and smelling amazing it’s time to add the cream, let the cream begin to slowly bubble and get hot and then you can drain off the potatoes, chop them up with a knife in the pan while they are hot and then chuck them in the pan with the chicken and leaks. Mix well and serve. I added a bit of cheese on top, just to give it a little something extra.
It’s quick! Easy! Cheap! And fab to use up leftovers!!
