I like to cook my salmon in many different ways and this is a lovely way to give you the perfect taste as the honey beautifully infused the boost of the garlic without it being over powering.
Ingredient for the glaze:
- 1/2 cup of honey
- 1/4 – 1/2 cup of olive oil
- 3 cloves of crushed/minced or finely chopped garlic
- Salt & black pepper
- Sprinkle of dried parsley.
Pre heat the oven to gas mark 6. Line a roasting tin with foil and lay in the fillet (s) of salmon.
Now add some salt and pepper over the top, I used cracked salt and black pepper.
In a side bowl mix in the olive oil, garlic and honey and give it a good mix. In the ingredients list I’ve stated 1/4-1/2 cup of oil this is because I added 1/4 but then personally for me, I found the consistency of the glaze, a little too thick so I added a little more. This is is entirely a personal choice for you though.
Now pour the glaze over the salmon and make sure you use the back
With the back of a t.spoon spread it all over, catching any that get away over the sides. Once covered, let glaze flow off the salmon naturally. Cover with more foil and tightly grip it around the sides of the roasting tin to ensure it keeps in all that beautiful steam for cooking.
Now place in the oven (I use the top as my oven seems to cook better up there but you may want to use the middle shelf as it’s often the best place and not to hot.
Leave the salmon for around 10-20 mins but keep checking it after 10 as you don’t want it too cook too dry.
The perfect way that cooked salmon should look is…..cut through the thickest part of the fillet and if it’s started to pink and flake, it’s done!! However it should NOT look raw. Cook it to the way you enjoy it the most.
I always always serve mine with potatoes, veg & cheese sauce but you may like it without a sauce or with a thick Hollandaise.
