Back when me and Cen were dating (nearly 10 years ago 😮) he used to take me to a fabulous little place to eat that was the cheapest priced in the town but served the most amazingly beautiful food!! Saray was the name! Every time we went, i always ordered the same thing, beaut köfte meatballs in a gorgeous tomato sauce, rice with veg and topped with mozzarella. I actually can’t remember the real name for it but I decided to make my own version of it to see if o could remake my fave turkish dish!!
It taste even more gorgeous with a bit of cheesy garlic bread on the side to dip in mmmm!!!
- 500g lamb mince
- 1 tsp of black pepper or a lot of cracked black pepper.
- 1 tsp oregano
- 1tsp salt
- 1/2 tsp Garlic salt
- 1 tsp cumin
- 1tsp paprika
- 1tsp parsley
- Olive oil
- 650ml boiling water
- 1 tin chopped tomatoes
- 3-4 hand fulls of white rice
- 1tsp red pepper spice
- 2 tbsp red pepper paste
- 1 good squeeze of tomato purée
- 1tsp dried parsley
- 1tsp dried thyme
- 1 clove garlic finely chopped
- 2 chicken stock cubes
- 2 large carrots
- 1 large red onion both very finely chopped.
Pre-heat oven to 180* about gas mark 5, dig out a large Pyrex/casserole oven dish and then finely chop the peeled carrots and onion. Place these in the bottom off the oven dish and stand aside.
Now take a mixing bowl, chuck in the minced lamb, and all spices ect from the Köfte ingredients menu above. Squeeze all the ingredients together with your hands until they are all mixed in well and the mince is softer and warmer with the warmth of your hands. Now make balls out of the mixture. I got about 15 med sized meatballs/patties (they shrink) you can do them as big Or small as you like but remember you will need to adjust your cooking time to cater for them. Place the balls in the oven dish with the carrots and onion, drizzle over olive oil and put on the oven for around 20-25 mins.
Now boil the kettle and in a large jug measure out 650ml of boiling water and add 2 chicken stock cubes and stir until they have dissolved. Now add in all the ingredients under the sauce menu. YES add them all into the jug with the stock and stand aside.
When the 20 mins is up take the dish out of the oven and carefully stir the ingredients, sprinkle over around 3-4 hand fulls of white rice (I use Aldi’s cheapest rice to be fair and I love it) stir again carefully and then pour over the stock/sauce you made in the jug.
Now pop back in the oven for around 40 mins – 1 hour. (Basically until the rice and veg is cooked through and soft)
Once it’s ready, remove from the oven and lay the mozzarella over the top (rounds cut from a ball or two, depending how cheesy you want the dish)
Each the oven heat up to 200 and pop the dish back in For around 5 mins or until cheese has melted nicely.
It’s now ready!!! Don’t forget a nice bit of garlic bread to dip in goes beautifully with this dish 😉
